Physico-chemical and Nutritional Characterization of Phaseolus vulgaris L. Germplasm

Background: Beans constitute one of the most important grain legume species from socioeconomic point view, playing an essential role in a sustainable agriculture and food safety nutrition. In fact, beans contain rich diversity nutrients, highlighting their high protein, starch fiber content. Canary Islands have considerable beans, including three five cultivated Phaseolus: P. coccineus, lunatus vulgaris, latter being cultivated. Methods: Proximate composition, total phenolics, pH, acidity, minerals trace elements were determined 23 common bean accessions (P. vulgaris) order to find out nutritional potential promote cultivation. Result: Parameters found fell well into ranges data described literature for beans. The consumption contributes remarkedly daily intake protein (although is deficient sulfur amino-acids), fiber, phenolic compounds, such as Mg K Fe with low bioavailability), Cu Mn. Phenolic compounds increases when pH decreased acidity increased. Protein content was positively correlated content, except Se. Color seed influenced on starch, P, K, Mg, Fe, Zn, while shape only affected P K.
